MOLDED BEET SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cunningham Estate in Murphy, Texas in 1984. Ingredients:
2 cans sliced beets |
1 large package lemon gelatin |
1/4 cup minced onion |
1/2 teaspoon salt |
1/4 teaspoon allspice |
2 teaspoons prepared horseradish |
3 tablespoons fresh lemon juice |
1 teaspoon horseradish |
1/2 cup sour cream |
1/2 cup real mayonnaise |
Directions:
1. Drain beets and reserve liquid then add enough water to make 3-1/2 cups. 2. Combine gelatin, liquid, onion, salt, allspice and horseradish in saucepan. 3. Stir over medium heat until gelatin dissolves. 4. Remove from heat and stir in lemon juice then chill until mixture starts to thicken. 5. Dice beets then add to mixture. 6. Put in mold that has been sprayed with cooking spray and chill thoroughly. 7. Combine horseradish, sour cream and mayonnaise and use as dressing. |
