Adapted from The Onion Skin. This recipe comes from Gladys Chatfield and has been passed down through three generations to member Maeve McBride, who makes it with white wheat flour. Itâ??s moist and delicious! Ingredients:
1 cup molasses, or honey or maple syrup
1 cup water, warmed
1/2 cup salted butter
1 egg
1 tsp. cinnamon
1 tsp. ginger
1/2 tsp. cloves
1 1/2 tsp. baking soda
2 cups unbleached all-purpose flour
Directions:
1. Preheat oven to 350 and grease an 8x8 cake pan.
2. Cream together molasses, warmed water, butter and egg.
3. In a separate bowl, combine cinnamon, ginger, cloves, baking soda, flour, and salt.
4. Combine wet and dry ingredients and beat until smooth. Bake for 35 minutes until a toothpick inserted in the center comes out clean.
