Excellent muffin of substance without dryness or heaviness. Perfect for the freezer and defrosted for a quick breakfast.
Ingredients:
1 cup rolled oats
1 cup wheat germ (try 1/2 c. ea. oat or wheat bran or wheat germ)
1/2 cup soy flour
1 cup whole wheat flour
1/2 cup flax seed meal (ground flax seeds)
1/2 cup powdered milk
1 teaspoon salt
2 1/2 teaspoons baking powder
1/2 cup canola oil
1 cup molasses
1 1/2 cups milk
2 eggs
Directions:
1. Beat eggs; measure remaining liquid ingredients and blend. Add oats & stir. Measure & add all other dry ingredients on top; blend all together just until moistened. Bake in sprayed muffin cups at 375* for 18-20 minute.
