Mojo Marinated Pork Tacos

1. For the Pork:
2. T. fresh orange juice
3. T. veg. oil
4. T. fresh lime juice
5. T. minced garlic
6. T. Chopped fresh oregano
7. /2 t. salt
8. /4 t. pepper and red pepper flakes
9. -3 lbs. pork tenderloin
10. For the Tortillas
11. -in corn tortillas
12. c. canned refried black beans
13. c. shredded cheese
14. Place tenderloin in baking dish and pour marinade over met. Mover and chill for up to 2 hours. Grill pork covered turning often until meat thermometer read 150 degrees, about 12-15 minutes. Remove from grill and let rest while preparing tortillas. Top tortillas with 2 T. each of beans and cheese. Place over med.-high heat until cheese begins to melt. Top each tortilla with slice of pork. 340 caloires/taco. Serve with Grilled Salsa Roja (listed below)
15. Grilled Salsa Roja
16. -6 roma tomatoes (1 1/4 lbs)
17. /2 small onion
18. cloves garlic, wrapped in foil
19. /4 c. fresh cilantro
20. jalapeno
21. T. fresh lime juice
22. /4 t. salt
23. Grill tomatoes, onion, garlic packet and jalapeno until vegies are soft, about 5 min. Remove from grill and let cool. Peel tomatoes, garlic and jalapeno and place in food processor with grilled onions, cilantro, lime juice and salt. Pulse a few times until salsa is blended but still chunky.
