Nothing like a cool dessert on a hot summer day. Recipe compliments courtesy of my local grocery store.
Ingredients:
1 cup finely crushed pretzels
1/4 cup butter, melted
1 - 8oz pkg cream cheese, softened
2/3 cup sugar
zest and juice from 1 large lime
2 tbsp fresh mint, finely chopped
1 3/4 cups whipped topping, thawed and divided
fresh mint - garnish
Directions:
1. Mix pretzel crumbs and butter.
2. Press onto bottom of plastic wrap-lined 9 round pan.
3. Freeze until ready to use.
4. Beat cream cheese, sugar, zest, juice and mint until well blended.
5. Whisk in 1 1/4 cups whipped topping; and spoon over crust.
6. Freeze for 4 hours.
7. Top with remaing topping and garnish with additional mint.
