For me, a really good mojito is made with simple sugar. That way, you are assured that the sugar is completely dissolved when you add the rum and club soda. This recipe also calls for mint infused simple sugar, which makes the minty taste even more intense. Prep time does not include time to cool the simple sugar.
Ingredients:
1 cup sugar
1 cup water
20 mint leaves, divided
1 1/2-2 ounces light rum
1/2 lime
1 club soda
Directions:
1. To make the simple syrup, mix the water with the sugar. Heat to boiling, stir until the sugar dissolves. Turn off the heat and toss in 10 mint leaves. Let steep for an hour or so. Strain out the leaves and store in the fridge until you are ready to use it.
2. To make one mojito: Pour 1 ounce mint-infused simple syrup into a tall glass.
3. Add 10 mint leaves, and muddle it together. (Use a muddler or a spoon.)
4. Add crushed ice. Muddle some more.
5. Add to that 1-1/2 to 2 ounces of light rum.
6. Squeeze in the juice of half a lime.
7. Add a splash of club soda and stir.
8. Garnish with a mint sprig and a slice of lime.
9. To make more, just remember the ratio: 2 parts syrup, 1 part lime, 3 parts rum. Oh, and lots of mint and club soda!
