Moist Pumpkin Bread

After letting it rest out of the pan for 10 minutes, I like to cut a piece from the center where it's slightly undercooked and pudding-like.
Ingredients:
1/2 (15 ounce) can pumpkin puree (i add a little extra)
1/2 cup canola oil (or vegetable oil)
2 eggs
1 3/4 cups all-purpose flour
1 1/2 cup white sugar
1 tsp ground cinnamon
3/4 tsp baking soda
3/4 tsp salt
3/4 tsp ground all-spice
3/4 tsp nutmeg (1/2 tsp if using freshly grated)
1/2 tsp baking powder
Directions:
1. Preheat oven to 300 degrees F
2. Combine pumpkin, oil and eggs.
3. Sift together dry ingredients and combine the two mixtures, blending thouroughly, but DO NOT over mix.
4. Pour into a greased loaf pan and bake for about an 1 hour.
5. I like mine so slightly underdone in the middle so its pudding like.
