Moist Fibre Muffins

These muffins are great for a snack or breakfast on the go. Very moist and filling.
Ingredients:
1/2 cup unprocessed bran
1/2 cup soft tofu
large carrot
1/2 cup brown sugar
1 cup self raising flour
150ml soymilk
1/2 cup crushed walnuts
cinnamon
Directions:
1. Grate carrot and crush walnuts.
2. Combine tofu and bran with processor/mixer stick.
3. Add carrot to processor if smooth batter preferred (I do).
4. Add flour, sugar and soymilk. Mix until well combined.
5. Fold in walnuts.
6. Add cinnamon to taste. I use around 1 1/2 teaspoons.
7. Spoon mixture into lightly oiled mufin cups.
8. Bake at 180C (356F) for 30 minutes or when cooked through. !Do not allow to burn!
