Moist Carrot Cake

An easy to make and always a hit in my family.It is so good that we don't even frost the cake...as it is finished so quickly :)
Ingredients:
1 cup vegetable oil
1 cup sugar
2 tbsp honey,optional
3 eggs
1 1/4 cups all-purpose flour
2 tsp baking powder
pinch of salt
1/2 tsp ground cinnamon
2 cups grated carrots
1 cup chopped walnuts
Directions:
1. Preheat oven to 180°C. Grease and line a 9 round pan.
2. In a large bowl,beat together oil,sugar and honey.
3. Add eggs ,one at a time.Beat well.
4. Mix in flour,baking powder,salt and cinnamon.
5. Fold in carrots and walnuts.
6. Pour the mixture into the prepared pan.
7. Bake for 40 to 45 minutes or until a toothpick inserted into the center of the cake comes out clean.
8. Allow to cool in pan for 10 minutes before turning out onto a wire rack and cool completely.
9. Dust with Icing sugar or cover the cake with whipped cream / cream cheese frosting.
