Moist Carrot and Raisin Walnut Loaf

Ingredients:

Directions:

  1. Grease a loaf tin and line the base.
  2. Cream butter, sugar and vanilla.
  3. Beat in golden syrup.
  4. Add eggs one at a time; beat until well combined.
  5. Stir in carrot, raisins and walnuts.
  6. (Don't worry if the mixture looks curdled; it will come out right when the flour is added.)
  7. Stir in sifted dry ingredients; stir until combined.
  8. Pour mixture into prepared pan.
  9. Bake in moderate oven about 1-1/4 hours.
  10. Let stand about 5 minutes before turning out onto a wire rack.
