This is a favorite muffin recipe of mine. It's easy and tasty.
Ingredients:
2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
2 eggs
1 cup granulated sugar
1/2 cup canola oil
1/2 teaspoon vanilla extract
1 cup sour cream, not low fat
1 cup blueberries, lightly dredged in flour
note: you can substitute any berry for the blueberries and they still come out tasting delicious.
Directions:
1. Preheat oven to 400 degrees F.
2. Use paper muffin liners or grease 24 muffin cups. Either way it doesn't matter.
3. Sift together dry ingredients.
4. Place all pre-measured ingredients near the mixer.
5. Beat eggs then gradually add sugar while beating.
6. Continue beating while slowly pouring in oil.
7. Stir in vanilla.
8. Mix dry ingredients into wet ingredients, alternating with sour cream.
9. Gently fold in blueberries or any other berry.
10. Scoop batter into prepared muffin cups, filling each about 2/3 full.
11. Bake for at least 20 minutes but you may find it necessary to bake them a little bit longer. It depends on your oven and altitude.
