Ingredients:
mofongo
Â1/4 cup(s) tropical food/™s diet delight® snack mix chopped
4 green plantains peeled & sliced
6 clove(s) garlic peeled & minced
1 & Â1/2 cup(s) canola oil
Â1/2 cup(s) butter or margarine
sofrito
1 onion diced
1 green bell pepper diced
1 teaspoon(s) dried oregano
2 clove(s) garlic minced
camarones guisados
1 pound(s) medium shrimp peeled & deveined
Â1/2, 15 ounce(s) can tomato sauce
Â1/4 cup(s) sofrito
Â1/4 cup(s) red bell pepper diced
yellow bell pepper diced
Â1/4 cup(s) cup green bell pepper diced
2 garlic cloves minced
onion diced
Â1/4 cup(s) tomato, diced
salt & pepper
Directions:
1. MOFONGO
2. Heat canola oil in a sauté pan and fry sliced plantains until soft. Add garlic cloves, Tropical Food’s Diet Delight® and butter or margarine to the hot plantains, mash.
3. SOFRITO
4. Puree onion, green pepper, oregano and garlic in a food processor.
5. CAMARONES GUISADOS
6. Heat tomato sauce and sofrito in a sauté pan. Add garlic, onion, red pepper, yellow pepper and green pepper; simmer until soft.
7. Add diced tomato and shrimp; bring to a simmer and cook until shrimp turn pink and firm.
8. Season with salt and pepper.
9. Plate with mofongo.
