Mock Egg Salad

This comes from the WSU Extension office. It calls for tofu in place of eggs.
Ingredients:
1 (12 ounce) package firm tofu
1 cup light mayonnaise
2 tablespoons mustard
1/2 cup pickle relish (sweet or dill)
1/2 cup chopped onion
Directions:
1. Open tofu package. Drain and dry tofu.
2. Put tofu in large bowl and dice into cubes.
3. Add mayo, mustard, relish and onion and gently stir, spread on bread and eat.
4. Variations: Try making it half yogurt in the mayo for less calories. Add real boiled eggs and double your protein. Try sweet hot mustard for a little kick. For extra crunch, add diced bits of celery and apple. Have fun, try to experiment a little.
