I have not tried this yet; posting for safe keeping. Raspberry sorbet can be substituted for the strawberry sorbet.
Ingredients:
3 cups water, divided
1 1/2 cups sugar
2 cups mint leaves, chopped
2 cups strawberry sorbet
1 cup lime juice
8 cups club soda
lime slice
mint sprig
Directions:
1. Combine 2 cups water & the sugar in a microwavable container. Microwave on HIGH 4-6 minutes until sugar is dissolved. Stir in mint leaves, let stand 5 minutes.
2. Combine sorbet remaining water & lime juice in a pitcher.
3. Carefully pour sugar mixture into pitcher.
4. Add club soda.
5. Stir gently.
6. Pour into ice-filled glasses. Garnish with lime slices and mint sprigs if desired.
