Ingredients:
i did everything by eye so i'll attempt to put it into measurements for you. keep in mind these aren't exact, use your own judgement and taste the batter a lot.
2 to 2 1/2 cups of all-purpose flour
1 cup granulated sugar
1/2 cup confectioner's sugar
1/2 cup of dark brown sugar
1 egg, lightly beaten
2/3 cup of unsweetened baker's chocolate
1 cup swiss mocha powder from international coffees + more for on top of cookies if desired
2 whole sticks or 1 cup of unsalted butter, softened
1 tbspn cinnamon + more for insides
1 tspn salt
1 tspn baking powder, which i forgot about. (that explains why the cookies came out flatter than the funny pages.)
whole boatloads of marshmellow fluff. yummy
Directions:
1. Preheat the oven to 350F.
2. With a mixer or your hands, meld the butter with the flour, sugars, cinnamon, mocha powder, cocoa powder, salt, and baking powder.
3. Add the egg and beat until smooth dough forms.
4. Put small amounts onto an ungreased cookie sheet and bake at 350 for about 10 minutes, or until edges are slightly browned.
5. Remove, let stand for 2-5 minutes, then with a spatula, transfer cookies to a paper towel-lined plate and let cool completely.
6. When the cookies are cooled, use a butter knife to spread the yummy, gooey fluff over one, sprinkle a bit more cinnamon and form into a sandwich. (Be careful, they're delicate!)
7. I could be off about the servings, my roommate and I gobbled up a whole bunch before they even became sandwiches, so it could make as many as 30. Who knows? They're awesome.
