Ingredients:
1- package ( 9 ounces) chocolate wafer cookies
1/3 - cup light corn syrup
1/3- cup coffee liqueur such as kahlua........
1- cup finely chopped walnuts, toasted
3/4- cup powdered sugar
3- tablespoons unsweetened cocoa powder
chocolate-covered coffee beans for topping each cookie
Directions:
1. Break half the of the cookies in half; place in food processor and process using the on /off pulse button until fine crumbs form 2. transfer to a small bowl 3. repeat with remaining cookies 4. combine corn syrup and liqueur in a medium bowl 5. stir until well blended 6. stir in crumbs and walnuts until well blended 7. combine powdered sugar and cocoa in a small bowl 8. add 1/2 cup cocoa mixture to cookie crumb mixture stir until blended. 9. reserve remaining cocoa mixture for coating 10. shape dough into 1 inch ball with greased hands 11. place in container..cover container 12. refrigerate at least at least 3 hours or up to 3 days before serving 13. roll each ball in reserved cocoa mixture to coat 14. transfer to serving dish 15. garnish each cookie with a chocolate covered coffee beans 16. makes about 3 dozen cookies .................
