Mocha Macadamia Candy

An exotically different way of making candy... almost like a layered marzipan! Sweet with a coffee and chocolate kick, but cut small squares!
Ingredients:
1 tsp cornstarch
2 tbsp hot water
2 cups chopped macadamia nuts
2/3 cup pure icing sugar
1/2 cup sugar
1 tsp vanilla
1 tablespoon instant coffee
1 tbsp unsweetened cocoa powder
Directions:
1. Whisk together the cornstarch and water, set aside.
2. Blend the chopped macadamias, sugars and vanilla in a food processor until well combined. Add cornstarch mixture and gind to a coarse paste.
3. Remove half of the mixture and press into a lightly greased 8 square tin.
4. Add coffee and cocoa to remaining mixture, and process until smooth.
5. Pat on top of bottom layer, pressing down gently with hands.
6. Cover with plastic and refrigerate at least 1 hour before cutting.
