The creamy filling in these bars will surely please. This recipe is easy and doesn't require many ingredients.
Ingredients:
25 reduced-fat cream-filled sandwich cookies
3 tbs fat-free hot fudge ice cream topping
3 tbs butter,melted
filling
1 envelope unflavored gelatin1/2 c strong brewed coffee,cold
2 pkgs.(8 oz ea.)reduced-fat cream cheese
3/4 c sugar
1 c (8 oz) reduced-fat sour cream
3 oz bittersweet chocolate,melted and cooled
24 chocolate covered coffee beans
Directions:
1. Place cookies in food processor. Cover,pulse into fine chunks.
2. Add fudge topping and butter,pulse till just blended.
3. Press onto bottom of 9x13 baking dish coated with cooking spray.
4. Meanwhile,for filling,in a small saucepan sprinkle gelatin over coffee,let stand 1 min. Heat over low heat,stirring until gelatin is completely dissolved. Remove from heat;set aside
5. In large bowl,beat cream cheese and sugar till smooth. Beat in the sour cream,chocolate and reserved coffee mixture until blended. Pour over crust. Cover and refrigerate at least 4 hours.
6. 166 calories a piece.
