These are not the molasses cookies I remember from childhood but I think they'll do ;-) They are lovely served with a cup of tea, coffee or a glass of cold milk!
Ingredients:
1 cup molasses
1 egg
1 tbsp. baking soda
2 tsp ginger
1 tbsp. white vinegar
1 tsp. cloves
1 cup shortening or 1/2 cup shortening and 1/2 cup butter/margarine
1 tsp. salt
1 cup brown sugar
4 cups all-purpose flour
Directions:
1. In a large saucepan, bring molasses to a boil.
2. Add soda and vinegar.
3. Note: Now, we all know the chemical reaction that occurs when we combine baking soda and vinegar. So, be prepared for some bubbling up!!!
4. Blend well and cool.
5. Add shortening, brown sugar, egg and dry ingredients sifted together.
6. Roll out ( I scooped by the Tbsp.) and bake in a moderate 350 degree oven for 10-12 minutes.
7. These may be rolled in cling wrap and stored in the refrigerator until needed at which time they are sliced and baked.
