There's nothing so good and refreshing as mango salsa. I serve mine with tortilla chips or just eat it by itself as a side dish.
Ingredients:
2 mangos (preferably honey mangos) - peeled, seeded, and diced
2 large roma (plum) tomatoes, seeded and diced
2 large cloves garlic, minced
1 shallot, minced
1 green chile pepper, seeded and diced
1 lime, juiced
3 tablespoons pineapple juice
2 tablespoons olive oil
1 teaspoon salt
Directions:
1. Stir the mangos, tomatoes, garlic, shallot, green chile pepper, lime juice, pineapple juice, olive oil, and salt together in a bowl; refrigerate 1 hour to allow the flavors to mingle before serving.
