Mizithropita- Greek Cheese Pie

Mizithra is Greek for the cheese ricotta salata- my favorite cheese of all time! A traditional Greek dessert that is served with Greek coffee at my house!
Ingredients:
1/2 lb phyllo sheets
1/2 lb butter, melted
1 lb mizithra (ricotta salata) cheese (grated)
1/2 c sugar
6 eggs
1/2 lb honey (i use attiki brand- very delicious!)
Directions:
1. Combine cheese, honey and sugar until well blended.
2. Beat eggs well and fold into the cheese mixture.
3. Place eight individually buttered pastry sheets on bottom of 13x9 baking pan and pour cheese mixture in to the center.
4. Spead with spatula.
5. Sprinkle with cinnamon.
6. Top with eight more individually buttered pastry sheets.
7. Bake at 350 for 30 minutes.
8. Let cool for 15 minutes.
9. Serve.
