I had this salad at a restaurant earlier this week and think my version is pretty darned close. You can serve it with sliced grilled chicken if you like, or leave it off. Other fruits can be substituted to suit tastes. Read more . Make up the salad dressing and the candied walnuts ahead of time and this salad goes together in a snap.
Ingredients:
misc. mixed salad greens
blueberries
blackberries
granny smith apples, thinly sliced
candied walnuts
grilled chicken, sliced (optional)
cinnamon salad dressing
Directions:
1. All amounts to taste. Place mixed greens on plate and top with fruit, candied walnuts and grilled chicken (optional). Top with Cinnamon Dressing.
2. Cinnamon Salad Dressing:
3. 1/2 cup sour cream
4. 2 Tbsp. honey
5. 1 tsp. lemon juice
6. 1/2 tsp. cinnamon
7. Up to 1 Tbsp. of milk
8. Mix all ingredients together and refrigerate.
9. Candied Walnuts:
10. Non-stick vegetable spray
11. 6 Tbsp. plus 3 more Tbsp. sugar
12. 3 Tbsp. orange-tangerine juice, or orange juice
13. 2 cups walnut halves (for this recipe, chop them into large pieces)
14. 1/2 tsp. ground cinnamon
15. Preheat oven to 350ยบ. Place oven rack on top or second shelf down. Line a large cookie sheet with foil and spray with non-stick spray. In a 10 skillet over med. heat, add 6 Tbsp. sugar and juice. Bring to a simmer, and add walnuts. Cook until sugar is absorbed and mixture starts to caramelize around walnuts, stirring constantly, about 2 mins.
16. In a small bowl, combine cinnamon and remaining 3 Tbsp. sugar. Toss walnuts in cinnamon-sugar. Place walnuts in single layer on prepared cookie sheet. Bake until walnuts appear crystallized and toasted, about 8 mins. Cool completely.
