This is a wonderful light mixed salad to eat as a meal or as an accompaniment.
Ingredients:
4 cups torn mixed salad greens
4 cups baby spinach leaves
1 large navel orange, peeled and cut in quarters
1/3 cup dried cranberries
1/3 cup thinly sliced red onion rings
1/3 cup or more to taste balsamic vinaigrette
4 to 6 cooked slices of bacon, chopped
blanched slivered almonds optional
Directions:
1. Mix all ingredients together in a large serving bowl. You may add almonds on top if you wish. Serve with whole wheat buns.
