Mixed Grill Satay

These appys originally were made with pork, however they are just as great with chicken or large shrimp. Make sure to make the salad and sauce for the full affect. Cooking time does not include marinading time.
Ingredients:
6 boneless pork chops, partially frozen
1/2 cup bottled teriyaki marinade
1/2 cup peanut butter
1/4 cup brown sugar
1/4 cup water
2 tablespoons rice wine vinegar
2 tablespoons soy sauce
1/4 teaspoon garlic powder
1/4 teaspoon powdered ginger
1/8 teaspoon cayenne pepper
1 1/2 cups cucumbers, thinly sliced
1 green onion, thinly sliced
2 tablespoons rice wine vinegar
1 tablespoon sugar
1/4 teaspoon salt
18 wooden skewers (6 inches each, soaked in water for 1 hour)
Directions:
1. Thinly slice pork chops.
2. Thread onto skewers accordion style.
3. Place in shallow baking dish; pour marinade over meat.
4. Refrigerate covered 2 hours or overnight; turning occasionally.
5. Grill over medium coals 10 minutes or until cooked through, turning every 3-4 minutes.
6. For dipping sauce, combine ingredients in bowl; mix with wire wisk until blended. Makes approximately 1 cup.
7. For salad, toss cucumbers with remaining ingredients.
8. Makes 1-1/2 cups.
9. Serve with Peanut Dipping Sauce and Cucumber Salad.
