A quick easy recipe from .au to make a tasty dhal using a mixture of lentils. . Add more chilli for extra spice, if preferred. Serve with pappadums or rice. Enjoy!
Ingredients:
1 tablespoon vegetable oil
1 onion, chopped
2 garlic cloves, crushed
1 hot red chili pepper, finely chopped
2 teaspoons grated fresh ginger
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon turmeric
400 g diced tomatoes
1 1/4 cups vegetable stock
1/4 cup yellow split peas, soaked 30 mins, rinsed & drained
1/4 cup red lentil, rinsed & drained
1/4 cup brown lentils, rinsed & drained
1/4 cup chopped fresh cilantro
Directions:
1. Heat oil in large saucepan over high heat. Saute garlic, chilli and ginger for 3-4 mins until onions are tender.
2. Add the cumin,ground coriander and tumeric. Cook, stirring for 1 minute.
3. Mix in the tomatoes, stock, split peas and lentils. Bring to boil. Reduce heat & simmer, covered, about 30 mins until dhal is tender.
4. Stir half the fresh cilantro through. Sprinkle with the remaining coriander, to garnish.
