The herbs in this salad and the crunch of the peanuts make it very special. One of my favorites right now. You can actually have a big container of it in the fridge and just add the sauce before serving. It is a ready to go meal.
Ingredients:
salad
4 cups finely sliced purple cabbage
4 cups finely sliced cabbage
1 cup mixed herbs, i used parsley, mint, basel and coriander, chopped
1/2 cup chopped spring onions
1/2 cup golden raisins (i use the seedless kind)
1/2 cup salted roasted peanuts
dressing
1 clove garlic, finely chopped
1 tbsp tabasco (optional)
3 tbsp rice vinegar
2 tbsp soy sauce
2 tbsp tahini
2 tbsp olive oil
1 tbsp sesame oil
salt and pepper to taste (remember the soy sauce is quite salty)
Directions:
1. Start by making the dressing.
2. I find it easier to use a glass compote container with lid. Put all ingredients into the container - close with the lid - and shake vigorously. It's ready ;)
3. Combine all the salad ingredients except the peanuts in a large serving bowl.
4. Drizzle with the dressing (you probably won't need it all - if so close with the lid and store in the fridge up to a week).
5. Sprinkle the peanuts all over the salad just before eating.
