Ingredients:
2 tablespoons red wine vinegar
1/2 cup olive oil
1 tablespoon dijon-style mustard
4 teaspoons curry powder
1/4 teaspoon salt
8 ounces mixed baby greens
1/2 cup whole pecans, toasted and chopped
1/4 cup raw pumpkin seeds, toasted
1 gala apples, diced
1/4 cup raisins
Directions:
1. Combine vinegar, oil, mustard, curry powder and salt in a jar and shake vigorously to combine.
2. Place greens in a bowl with pecans, pumpkin seeds, apple and raisins.
3. Add about half of the dressing and toss thoroughly.
4. Add more vinaigrette if needed.
