Finally, a muffin that is not too sweet! Customize the recipe to your tastes (or to what you have on hand) by adding fruits, chocolate chips, and nuts. Recipe from Sara's Secrets on FoodTV.
Ingredients:
1 1/2 cups all-purpose flour
1/3 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter
1 cup sour cream
1 large egg
1 teaspoon vanilla
1 cup fresh blueberries or 1 cup dried blueberries
1 chopped banana, with
3/4 cup chocolate chips
1 tablespoon orange zest, with
3/4 cup dried cranberries
1 cup dried cherries, with
3/4 cup chocolate chips
Directions:
1. Preheat oven to 400 degrees F and line 12 (1/3-cup) muffin cups with paper liners.
2. Into a bowl, sift together flour, sugar, baking powder, baking soda, and salt.
3. Melt butter and in a small bowl whisk together with sour cream, egg, and vanilla.
4. Stir butter mixture (and additional ingredients) into flour mixture until just combined.
5. DO NOT OVERMIX!
6. Handle this batter gently!
7. Divide the batter among muffin cups (this batter is thick and will not run easily like other muffin batters) and bake in middle of oven until golden and a tester comes out clean, about 20 minutes.
