Ingredients:

  • 4 cups cold water
  • 1 4-inch square of konbu seaweed
  • 1/4 - 1/2 cup white miso
  • 1/2 cup cubed tofu

Directions:

  1. Place konbu and water in pot
  2. Leave to soak overnight
  3. Bring to boil
  4. Remove from heat and add bonito flakes
  5. Strain broth after 3-4 minutes
  6. Bring broth up to simmer
  7. Add spinach, miso and tofu and remove from heat
  8. Serve hot
