This is a recipe I received from Coastal Seafoods in Minneapolis.
Ingredients:
dashi for miso soup
5 cups water
2 cups bonito flakes (dried tuna flakes)
1 strip kombu
miso soup
5 cups dashi
2 tbls miso paste (can use shiro miso - has a lighter flavor)
4 oz cubed tofu - medium firmness
1 tbls dried wakame (black seaweed flakes)
garnish with a sprinkling of green onion
garnish with daikon slivers- optional
Directions:
1. Combine 5 cups of water and 1 strip Kombu in a pot and cook for 20 minutes below a rapid boil.
2. Take out strips of Kombu.
3. Add Bonito flakes and simmer for 10 minutes.
4. Strain liquid to get out flakes.
5. Add 5 cups of strained Dashi broth to pot.
6. Add the Miso Soup ingredients.
7. Simmer.
8. Garnish and serve.
