Light and easily digested at the start of the day. It keeps blood sugar levels balanced. I haven't tried it yet, but it sounds good! I got this from Modern-Day Macrobiotics.
Ingredients:
3 inches wakame seaweed, strip
1 tablespoon miso
1 handful watercress, finely chopped
2 leaves chinese cabbage, finely chopped
2 sheets nori, seaweed cut into fine strips
1/2 teaspoon ginger, grated
Directions:
1. Pre-soak the wakame strip in a bowl for 2 minute.
2. Bring 4 cups of water to a boil in a pan and reduce the flame to a simmer.
3. Add wakame strip and simmer for 3 minute.
4. Put miso paste in cup and dilute it with 2 tbsp of cold water.
5. Add miso mixture to pan, stir, and simmer gently for 1 minute.
6. Add watercress and chinese cabbage leaves and turn off heat.
7. Serve with strips of cabbage.
8. Add a pinch of grated ginger.
9. Enjoy!
