Miso Roasted Brussels Sprouts

Creamy white miso lends subtle sweetness, body, and key saltiness to inherently delicious roasted Brussels sprouts. This recipe is super fast and easy to boot!
Ingredients:
1 lb. brussels sprouts
1/4 c shiro (white) miso paste
1 oz. warm water
1 tbsp. olive oil
1 garlic clove
1/4 tsp. kosher salt
Directions:
1. Preheat oven to 375 degrees F.
2. Cut off the brown ends of the Brussels sprouts and pull off any yellow outer leaves. Mix them in a bowl with the olive oil, garlic, and salt. Spread them on a sheet pan and roast for 15 minutes.
3. While the Brussels sprouts are roasting, mix together the miso paste and water. Put half of the miso/water mixture into the bowl you used to toss the sprouts, and set the other half aside.
4. After 15 minutes, toss the sprouts in the bowl with the miso paste and return them to the pan. Roast another 15 minutes, then remove and toss with the rest of the miso paste. Roast another 10-15 minutes, until tender on the inside. Serve immediately.
