Lemon and mint give this fresh bean salad a fabulous flavor. You'll get the kids to forget they are eating veggies!
Ingredients:
1lb green beans
1 lb wax beans-yellow
1 red pepper seeded and chopped into small pieces
4 tbsp extra virgin olive oil
4 tbsp lemon juice
4 tbsp chopped fresh mint
1/3 tsp salt
1/3 tsp black pepper
water
Directions:
1. Bring pot of salted water to a roaring boil.
2. Add beans and cook 2 min or until just crisp tender
3. Drain and rinse under cold water
4. Put in serving bowl and toss beans with rest of ingredients
5. Enjoy
