Minted Sugar Snap Peas

Wonderful side with lamb or pork.
Ingredients:
3 cups sugar snap peas
1/3 cup apple juice
2 teaspoons chopped fresh mint
1/4 teaspoon grated fresh lemon rind
1 teaspoon butter
Directions:
1. In skillet, combine peas and apple juice; bring to a boil.
2. Cover and cook on med for 2 minutes.
3. Add mint and lemon, bring to a boil.
4. Cook for 1 minute.
5. Add butter and toss well.
