This refreshing soup is wonderful most people I serve it too are impressed with the flavour
Ingredients:
approx 3 cups mashed cooked pumpkin
approx.2 cups water and a chicken stock cube or 2 cups chicken stock, you can use vegeta if you prefer
1 cup milk
s/p
approx 1 tablespoon chopped fresh mint
Directions:
1. Combine pumpkin and water; or stock stir to form a puree. Add milk or cream, s/p to taste heat stirring add mint .
