Try this on vegetables or salads as well as pasta. From 1001 Low Fat Vegetarian.
Ingredients:
1 cup fresh mint leaves (packed)
1/2 cup fresh parsley
2 garlic cloves, minced
2 tablespoons parmesan cheese, grated
2 tablespoons walnut pieces
2 -3 tablespoons olive oil
2 -3 tablespoons vegetable stock or 2 -3 tablespoons water
salt and pepper
Directions:
1. Process all ingredients except stock, salt and pepper or food processor or blender until smooth.
2. Stir in enough stock to make a spoonable mixture; season to taste with salt and pepper.
3. Serve at room temperature.
