Minted Peas With Peppercorns

Ingredients:
1/2 cup water
3 fresh mint sprigs
2 tablespoons unsalted butter
1/8 teaspoon salt
1/8 teaspoon granulated sugar
4 cups fresh green peas
2 teaspoons coarsely ground pink peppercorns
1/4 teaspoon coarsely ground black peppercorns
1 teaspoon finely chopped fresh mint
1/2 teaspoon sea salt
Directions:
1. Combine water, mint, butter, salt and sugar in a medium sauce pot.
2. Bring mixture to a boil and reduce to a simmer for 2 minutes.
3. Bring mixture back to a boil then add peas and cover the pan.
4. Reduce heat to medium low and simmer peas 5 minutes and remove mint sprigs.
5. Place peas in a warm bowl and stir in the peppercorns and fresh mint.
6. Season with sea salt and serve immediately.
