Nanaimo Bars have been a Canadian treat for a long time. There are many variations - coffee, cappacino flavoured, etc. My favourite is this mint nanaimo bar recipe. Enjoy!
Ingredients:
base
1/2 c butter
1/4 c white sugar
5 tbsp cocoa powder
1 egg, beaten
1 tsp vanilla
1 1/2 c graham cracker crumbs
1 c unsweetened shredded coconut
1/2 c chopped walnuts, toasted
filling
1/3 c butter
1/4 c milk
3 tbsp custard powder
3 c icing sugar
1 tsp peppermint flavouring
2 drops of green food colouring
topping
8 oz pkg of semi sweet chocolate morsels
2 tbsp butter
Directions:
1. Base:
2. Melt butter in saucepan.
3. Add sugar and cocoa. Mix well. Allow mixture to cool.
4. Whisk egg with vanilla. Whisk into cooled butter mixture.
5. Add graham crackers, coconut and walnuts.
6. Press evenly into greased 9 x 9 square pan.
7. Chill for at least 20 mintues
8. Filling:
9. Whip butter. Add in custard powder and milk.
10. Gradually add in sugar, flavouring and food colour.
11. Spread over base with spatula and return to the fridge.
12. Topping:
13. Melt chocolate and butter over water bath. Remove and cool down.
14. Add on top of the filling layer. Spread with spatula to get even layer.
15. Return to fridge for another 15 minutes.
16. Cut into squares and serve.
