Mint Irish Chocolate Cream Pie

This is a very refreshing, very chocolately, very minty pie that will please all the chocolate and mint lovers in your life. Very creamy and very impressive. Enjoy
Ingredients:
1 baked 9 pie crust cooled
1/2 cup cocoa
1-1/4 cups granulated sugar
1/3 cup cornstarch
1/4 teaspoon salt
2-3/4 cups milk
3 tablespoons butter
1-1/2 teaspoons vanilla extract
1-1/2 cups frozen whipped topping thawed
18 small peppermint patties divided
6 drops green food color
Directions:
1. Combine cocoa, sugar, cornstarch and salt in medium saucepan.
2. Gradually stir milk into dry ingredients.
3. Cook over medium low heat stirring constantly until mixture comes to full rolling boil.
4. Boil and stir one minute then remove from heat and stir in butter and vanilla.
5. Pour into prepared crust then carefully press plastic wrap directly onto pie filling and cool. Refrigerate 6 hours then remove wrappers from peppermint candies.
6. Remove plastic wrap from pie and just before serving cut 9 peppermint candies in half.
7. Place cut-side down at outer edge of pie filling forming a scalloped edge.
8. Finely chop remaining 9 candies and fold them into whipped topping with green food color.
9. Spread pie with peppermint topping then serve immediately.
