Miniature Langostino Lobster Rolls

I love me a lobster roll, oh yes I do. Bite sized is perfect for parties and I was inspired to make these by the New England lobster rolls served with potato chips. I served these twice this week and they were a huge hit at both events - hope you try them! Read more !
Ingredients:
1 pound cooked langostino or lobster tails, finely chopped
1/2 cup best foods/hellmans mayonnaise
fresh lemon juice, to taste
fresh chives, chopped
old bay seasoning or cajun seasoning, to taste
12 small soft dinner rolls (or quality hot dog buns)
melted, clarified butter (for brushing on bread)
kettle cooked olive oil potato chips, lightly crushed
Directions:
1. Combine lobster, mayonnaise, lemon juice, chives and seasoning in a small bowl.
2. Cut rolls (see attached pics on how to) or buns quarted crosswise. Brush cut sides with butter. Working in batches, toast cut sides of rolls or buns until golden brown (I used an electric griddle). Transfer to serving platter and fill each with a little lobster salad. Garnish with extra chives and crushed kettle chips.
