Served as an appetizer or a side dish, these low-fat sweet potato knishes are created with matzoh meal for Passover or any time of year. Since the vitamin-A rich sweet potatoes, as well as the white potatoes, have been cooked in the can, these nutritious, sweet-tasting, bite-size knishes are quick and easy to prepare.
Ingredients:
1 can (15 ounces) sweet potatoes (yams) in light syrup, drained
1 can (15 ounces) potatoes, drained
1/4 cup chopped green onion
2 large eggs
1/3 cup matzoh meal
2 tablespoons margarine, softened
1/2 teaspoon salt
1/4 teaspoon black pepper
vegetable oil spray
1 egg yolk
1 tablespoon water
Directions:
1. Mash sweet potatoes, potatoes and onion together in a medium bowl. Mix in eggs, matzoh meal, margarine, salt and pepper; shape into 30 small balls. Coat a baking sheet with vegetable oil spray. Slightly beat egg yolk with water in a small bowl.
2. Arrange balls on baking sheet; brush with egg mixture. Bake at 400°F for 20 minutes, or until nicely browned.
