Mini Pepper Bites

These are super easy and delicious! Each bite has only 1 gram of fat too!!! (If you don't tell, no one will ever know!)
Ingredients:
1/2 cup chopped red bell pepper
1/4 cup scallions, finely chopped
2 eggs
2 egg whites
1/2 cup shredded sharp cheddar cheese
chili powder to taste (start with about 1 teaspoon)
1/2 teaspoon ground cumin
1/8 teaspoon ground red pepper, more to likin
1 can chopped green chilies, well drained
Directions:
1. Heat oven to 425°.
2. Spray a non-stick skillet with non-stick cooking spray.
3. Heat over medium-high until skillet is hot.
4. Cook bell pepper and onions in skillet until onions are tender.
5. In a bowl, beat eggs and egg whites slightly.
6. Stire in bell pepper mixture.
7. Add remaining ingredients.
8. Spray a mini-muffin pay with non-stick cooking spray.
9. Spoon 1 tablespoon of mixture into each muffin cup.
10. Bake 8-10 minutes or until centers are set.
11. Cool 1 minute.
12. Loosen edges with knife.
13. Remove from pan.
14. Serve immediately.
