Quick cooking muffin sized meatloaves with healthy vegetables hidden inside. The original recipe calls for turkey, but my family prefers beef.
Ingredients:
1 lb. ground beef (96% lean)
1 medium zucchini, shredded
1 c finely chopped onion
1 c finely chopped red bell pepper
1/3 c whole wheat couscous (uncooked)
1 egg, lightly beaten
2 t worcestershire sauce
1 t dijon mustard
1/2 tsp pepper
1/4 tsp salt
1/4 c barbecue sauce
Directions:
1. Preheat oven to 450 degrees F. Generously spray a nonstick muffin pan with cooking spray.
2. Gently mix beef, zucchini, onion, bell pepper, couscous, egg, Worcestershire, mustard, pepper and salt in a large bowl, preferably with your hands, without over working. Equally divide mixture among the muffin cups. Spread barbecue sauce on op of each loaf.
3. Bake until cooked through (thermometer should read 165), about 25 minutes. Let stand in pan 5 minutes before serving.
