Mini Meatballs With Dipping Sauce |

Nice for pot luck dinners or for freezing in smaller portions. I started making these a long time ago for my daughter's birthday party. She requested it for every birthday party after that. Ingredients:
1/2 cup pork sausage |
2 cups lean ground beef |
1 egg |
2/3 cup fresh white breadcrumbs |
3 tablespoons white wine vinegar |
2 garlic cloves, pureed |
8 drops hot pepper sauce |
2 teaspoons soy sauce |
1 teaspoon salt |
8 grinds black pepper |
1/2 teaspoon oregano |
1/2 teaspoon thyme |
flour (for dredging) |
1 cup beef stock |
1 teaspoon soy sauce |
2 tablespoons mustard |
1/4 cup white wine vinegar |
1 pinch salt |
1 pinch pepper |
1 pinch oregano |
1 pinch thyme |
2 tablespoons tomato sauce |
Directions:
1. Preheat oven to 450 degrees. 2. MEATBALLS:Mix all ingredients except for flour together, using a food processor if you want a very smooth mixture. 3. Shape into 1 inch balls; roll lightly in flour, and arrange in one layer in a lightly oiled baking dish or jelly roll pan. 4. Bake in upper middle level, 7 to 8 minutes, turning once or twice, to brown nicely and just to stiffen. 5. Reduce oven temperature to 350 degrees. 6. Drain in a sieve or colander. 7. SAUCE:In a medium sauce pan, boil down the ingredients for the sauce until lightly thickened, carefully correct seasoning, and fold in meatballs. 8. Bake for 20 minutes. |
