Mini Meat Loaves Wrapped in Bacon

I found this excellent recipe in Chris Jordan's Blog - (See notes from Chris) Hope you enjoy it.
Ingredients:
2 lbs lean ground beef
1/2 onion, chopped
2 garlic cloves, minced
1/2 teaspoon ground black pepper
2 eggs (chris uses 1 tablespoon cornstarch instead of the eggs due to allergies)
1/2 cup ketchup
1 cup dry breadcrumbs (chris uses gluten free bread crumbs)
1 cup shredded cheddar cheese (optional)
12 slices bacon
1 tablespoon worcestershire sauce
1 tablespoon low-sodium taco seasoning (optional)
Directions:
1. In a bowl, mix the meat with onion, garlic, ground black pepper, ketchup, Worcestershire, beaten eggs, (and add optional taco seasoning mix, if you like).
2. Add bread crumbs and mix well. (You will need to use your hands and knead it up well.) If you are going to add shredded cheese, toss it in at this point as well.
3. Roll the meat into 12 balls that fit into your muffins tin baking pan.
4. MY NOTE: I cooked the bacon slices separately in a skillet and drained all the excess of fat and set aside. I baked the meat loaves in a 350ºF. preheated oven for about 30 minutes until they were well cooked from the center.
5. Then, I placed meat loaves in a baking tray and wrapped a cooked bacon slice around each meatloaf and place in the oven again, only for a few minutes until bacon look crispy and attached around the loaves.
6. Serve with steamed broccoli and mashed potatoes, if you like.
7. Note: Chris says: It is sort of like a tiny self contained bacon cheeseburger .
