Mini Cheesecakes With Toffee Pears

A unique dessert, wonderful for summer or autumn....
Ingredients:
for crust
3/4 c. rolled oats
1/4 c. finely chopped walnuts
1/4 c. packed brown sugar
3 tblsp. butter, melted
for filling
1 8 oz.pkg cream cheese, softened
1 egg
1/2 c. crumbled blue cheese
1/4 c. sour cream
for toffee pears
2 tblsp. butter
1/2 c. packed brown sugar
2 tblsp. whipping cream
4 medium pears, cored, sliced
1/4 tsp. vanilla
for garnish
1/4 c. broken walnuts
crumbled blue cheese
Directions:
1. Preheat oven to 375
2. Coat 8 regular sized(2 1/2 in.) muffin cups with baking spray,
3. For crust, in a small bowl stir together oats, 1/4 c. chopped nuts, 1/4 c. brown sugar, and the 3 tblsp. melted butter
4. Spoon about 2 tblsp. of the oat mixture into each cup, press lightly on bottom and slightly up the sides to form a crust
5. Bake about 8 minutes or until a light brown
6. Cool on a wire rack about 5 minutes
7. Reduce oven temp to 325
8. for filling in a medium bowl beat cream cheese on medium speed until smooth
9. Add egg, beat until just combined
10. Stir in the 1/2 c. blue cheese and sour cream
11. Spoon 1 well rounded tblsp. of filling into the crusts
12. Bake about 20 minutes or until slightly puffed and set
13. Cool about 30 min.
14. Remove from muffin cups, place on a tray, cover and chill 2-24 hours
15. Let stand at room temp for 30 minutes before serving
16. for toffee pears
17. in a large skillet melt the 2 tblsp. butter over medium heat
18. Add the brown sugar and cream
19. Cook and stir until bubbly, add pear slices
20. Cook about 5 minutes more until pears are tender, stirring occasionally
21. Remove from heat, stir in vanilla, cool slightly
22. to serve, place individual cheesecakes on dessert dishes
23. spoon pear mixture around cheesecakes, sprinkle with the blue cheese and broken walnuts.
