i made this last night for lunches today nice and warming whilst its snowing
Ingredients:
2 onions, chopped
1 courgette, diced
3 carrots, diced
2 garlic cloves
1 vegetable stock cube
1 teaspoon dried rosemary
1 teaspoon dried oregano
400 ml passata
2 teaspoons balsamic vinegar
2 teaspoons sugar
1 pinch salt
1/2 teaspoon ground pepper
50 g frozen peas
50 g spaghetti (broken into bits)
500 ml boiling water
2 tablespoons olive oil
28 g fresh basil, torn
Directions:
1. Heat oil in pan add onions and sweat for 5 minutes add remianinbg vegetables and garlic and fry for a furtehr 5 minutes.
2. add all remaining ingredients and except the basil, bring to boil, turn heat down and simmer for 20 minutes.
3. tear basil and add just before serving.
