I had an explosion of tomatoes and needed something to do with them. other then throwing them at passing cars and blaming it on my kids. I guess I need to find a real reason to ground them. Read more . That and they are starting to catch on. Gallagher has an interesting answer to excess tomatoes. But what ever you do you have to take charge otherwise they can turn into a real problem. My neighbors are locking their cars. They must be tired of finding bags of tomatoes in the passenger seat. So I came up with this little recipe, it is fast, down and dirty. I hope you like it!
Ingredients:
1 avocado diced
1/2 med onion diced
2 med tomatoes diced
3 cloves garlic minced
juice from 1 small lime
1 loaf of french bread or begets
shredded parmesan cheese
Directions:
1. Dice the onion, avocado and tomatoes add the minced garlic and the juice form the lime.
2. Mix gently so you don't turn it into a mush.

4. Slice the bread into 1/2 slices
5. Top the bread with Parmesan cheese
6. Bake the sliced bread at 250 for about 5 minutes until the cheese is melted and the bread is a bit crispy
7. Serve the Bread with the fresh relish
