This was so easy, so fast, and so delicious! It's got pasta and meatballs, so kids like it. It's full of vegetables, so all you have to do is add a loaf of Italian bread, and dinner is on the table. This is also a great way to use up those last bits of vegetables languishing in the bottom of the freezer or veggie drawer. Read more . I know, it's just another veg/pasta soup that every mom makes, but seeing the meatballs in there was an aha! moment for me, so I'm posting it. From the Deperation Dinners women, in Cheap. Fast. Good (& I have to say that so far, the recipes are living up to the name!).
Ingredients:
1 can (14oz or so) chicken broth, fat free if you want
1 can (ditto) beef broth, also ff if that's your thing
2 cups frozen mixed (or leftover) vegetables
1 can (14oz-ish) diced or stewed tomatoes, undrained
20 already-cooked meatballs, defrosted if frozen
1/2 cup small pasta, or spaghetti/linguini/angel hair, broken into 1 to2-inch lengths
1 can (15oz or so) kidney beans, drained and rinsed
1 tsp italian seasoning
1/2 tsp (or more) garlic powder or minced garlic
1/4 cup grated or shredded parmesan
Directions:
1. Pour the 2 broths nto a dutch oven or soup pot, and place it over high heat. While it is heating, add the tomatoes, frozen vegetables, pasta, and meatballs. Cover the pot & bring to a boil, about 10 minutes.
2. Rinse and drain the beans.
3. When the soup is boiling, scrape any pasta that's stuck to the bottom of the pan,add the beans, Italian seasoning, and garlic.
4. Reduce the heat to medium or medium-high, and simmer about 5 more minutes, until the pasta is tender and the flavors have blended.
5. Serve immediately, garnishing each bowl with a tablespoon of parmesan.
