These are a great muffin. I love muffins anyway and there is so much stuff in these. It might take a couple of minutes to shred the whatever but it is worth it. Yummy!
Ingredients:
1 1/2 cups flour
1/2 cup whole wheat flour
1 cup sugar
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
1/4 teaspoon clove
2 cups shredded peeled apples
1/2 cup shredded carrot
1/2 cup coconut
1/2 cup raisins
1/2 cup chopped walnuts
2 eggs (beaten)
3/4 cup oil
1/4 cup milk
2 teaspoons vanilla
Directions:
1. In a large bowl combine and mix well the first 7 ingredients.
2. Gently stir into the dry ingredients the apples, carrots, coconut, raisins, and walnuts.
3. In a medium bowl combine and mix well the eggs, oil, milk, and vanilla.
4. Gently stir into the rest of the batter stirring in one direction only.
5. Fill paper line muffin tins 3/4 full.
6. Bake 350 degrees for 20-25 minute.
7. Remove and serve warm.
